Thermocouple welders are available where you can weld the thermocouple wire to the metal part once you have a proper connection. You can then use a good, isolated thermocouple measurement device to measure the temperature. During the heating cycle in some processes like transformer designs where you have lot of H foils, that are wound together you may need to embed a fiber optic type measuring device inside the assembly, and it may not be practical to get a well joint between the thermocouple and the metal part.
